I sort of made this up as I went along based on a Waitrose apple cake recipe and I was really pleased with how it turned out! I think if I did it again I would halve the recipe and do it in a loaf tin because it was quite monstrous, but I only had a really big doughnut-shaped tin!
Also, I meant to drizzle it with water icing when I was done but I didn't have any icing sugar :(
The (approximate) recipe, if anyone's interested!
For the cake:
280g butter
330g self-raising flour
280g caster sugar
2 tsp ground cinnamon
2 tsp instant coffee
5 eggs
5 apples
For the glaze:
2 tbsp butter
2 tbsp brown sugar
1tsp instant coffee
Method:
Preheat the oven to 180˚C.
Brush a large cake tin with oil and coat the inside with flour (or line with baking paper).
Peel and core the apples and dice them into 1cm cubes. Mix in a bowl with 1 teaspoon of the cinnamon and a tablespoon of flour and set aside.
Cream the butter and sugar until pale and fluffy. Add the eggs, cinnamon and coffee and whisk again.
Gently fold in the flour until combined.
Spoon in enough of the mixture to cover the base of the tin. Stir the chopped apple into the remaining mixture and pour into the tin.
Bake for 50 minutes to an hour, or until a skewer comes out almost clean.
While the cake is baking, melt the butter for the glaze and whisk in the sugar and coffee.
Turn the cake out onto a wire rack and brush all over with the glaze.
Okay, as soon as I have someone available to do the "touching the raw apples" part for my weird allergies, I am trying this. This looks amazing! :D
